This automatic yeast equivalents calculator, for yeast alternatives, assumes the (world's standard practice) weight and volume measures are: Active dry yeast = 0.25 ounce per 2-1/2 teaspoons, Instant yeast = 1 ounce per 3 tablespoons. Brewer's yeast, even though it is nutritionally rich in protein, chromium, selenium and B vitamins it does not contain essential Vitamin B12 so vegetarians take that into account. A great vitamin B12 supplement solution is to take Folate tablets - Folic Acid, B12 and B6 combination (Folate repairs our DNA as well - I have one table every day.) OK back to the brewers yeast, it is slow-rising yeast (because it produces ethanol instead of carbon dioxide which faster yeasts make), dough will rise much longer even if more yeast was added. Which means; dough can rise more than once, therefore, it can be used to add more flavor or texture into certain/quite marvelous baking. We use it with harder coarser flours, the Spelt flour is just one example.

I prefer to use the instant yeast as it contains a lot more of yeast living cells, 4 times more than active dry yeast and by 300% more than the compressed fresh yeast.
